Ala Moana cafe hosts class on secrets of tea

Learn the ways of tea at a free Tea 101 Class, 10 a.m. Saturday at the Pacific Place Tea Garden Caf at Ala Moana Center.

Pacific Tea owner Lynette Jee will summarize the history of tea, how fine teas are made and how to serve them properly. King cakes are a crowning tradition for Mardi Gras' Carnival season

NEW ORLEANS — In this home of Mardi Gras, people have strong feelings about what king cake is and when you should eat it.

The oval-shaped pastry with a plastic baby inside traditionally heralded the arrival of Carnival season on 12th Night — Jan. 6 — the day the Catholic faith says three wise men arrived with gifts for the baby Jesus. And it was eaten only until Mardi Gras, which was celebrated yesterday.

Now, to the dismay of traditionalists, the cakes come in many flavors and shapes, and are available all year round.

For Carnival historian Errol Laborde, that's not as it should be. Like oysters, Creole tomatoes and crawfish, some things are best at the proper time.

"No king cake will touch my lips before 12th Night or after Mardi Gras," he said.

Traditional king cake is made of cinnamon-flavored sweet bread-like pastry with thin icing, topped with purple, green and gold sugar.


Chicken Council Stir-fried chicken fillets with honey and ginger

In large bowl, combine all ingredients for marinade.Stir well. Add chicken pieces, cover with plastic wrap, and marinate in refrigerator 8 hours or overnight.In large sauté pan or wok, warm canola oil. Add chicken, one-half of marinade mixture and tablespoon light soy sauce. Stir-fry for two minutes over high heat. I've seen virtuous Hamlets like Simon Russell Beale and baleful, brooding ones like Nicol Williamson, mad ones like Mark Rylance, sound-minded ones like Toby Stephens, and several so mentally ambiguous that they justified Rosencrantz and Guildenstern's summing-up of the prince in Tom Stoppard's Shakespeare spin-off: "stark raving sane."

I've seen some manage the near-impossible, which is to be dull, and some become highly eccentric. I've seen Paul Rhys's willowy, weepy Hamlet scrub his nails and Yorick's skull in a bath while orating about destiny, Jonathan Pryce internalise his father's ghost into a deep voice that burped its demands up from his stomach, Samuel West's scruffy student prince share a joint with the Rosensterns, and Frances de la Tour, my first female Hamlet, mooch lankily about in clothes best suited to a transport cafe specialising in soggy chips.

School's Out, But Learning Is In

Looking for a way to entertain the kids over school break? Here are some family activities to check out during this upcoming vacation.

The Mashantucket Pequot Museum will feature a live appearance by Atka, an Arctic wolf, several films on climate change and new exhibits. Atka will be at the museum on Tuesday and Thursday at 11 a.m. and 1 p.m. The short film "Baked Alaska," which addresses climate change in the northwest state, screens Saturday through Monday, and Wednesday and Friday, at 1 p.m. "Our land, Our Life" follows the conflict between Native American ranchers and the federal government, and runs Feb. 23 and 24 at 1 p.m. The new exhibit "Icebreakers: Exploring Global Warming" covers the topic and includes an opportunity for participants to create a mock volcanic eruption; the exhibit runs Monday through Friday, 11 a.m.
